About 301 Redirect

I run a PHP site- cheapfoodindia.com. It gives me great pleasure to say that it has PR 1. It has a landing page of ‘major restaurants in India’. Now I would like to create a folder of such pages to retain detailed info about India. I would like to redirect my current page to my new page. Anyone has an idea about the same? What are the redirect rules like? How do I go about saving files? Should I save them in root directory or some other file? Kindly enlighten me on the same. Any suggestions are heartily welcome. Thanks!
