Link bait has come to be the preferred way to natural link building, meaning create something that naturally attract backlinks for your web page by getting people to talk about it, discussing it on forums, blogging about it, posting it in some social networking site and linking to it from their sites.
The crudest interpretation would be that it involves "baiting" other people to link to you. How it's done exactly varies, but you can't go wrong with provocative comments/discussions, calling people out, challenging deeply held beliefs. In other words, think, "What would the tabloids do if they were in my niche," then do that.
